Sandwich chains (Subway, Jersey Mike's, Firehouse Subs, Jimmy John's, Potbelly) have a wider vegan ceiling than chicken chains because the build-your-own format lets you assemble around the missing protein. Most chains carry a 'veggie' option that is just the bread plus vegetables, and many bread types are vegan by default.
